Three weeks ago I discovered blight on my tomatoes. I wasn’t really surprised as the weather had been hot and humid for a few days offering the perfect environment for it. I am also signed up to BlightWatch and they sent me an email alert. Knowing that, I checked my plants every day so, when the telltale signs appeared, I was prepared and I didn’t waste any time picking the fruit and getting rid of the plants.
I destroyed two thirds of my plants but, because I acted so fast, I hardly lost any fruit.
The question was with to do with the two and a half tons of tomatoes that were now sitting in my kitchen! Ok, I might be exaggerating a bit but not that much.
That’s only part of it….
Yep… that’s a lot of tomatoes.
I went to my know-it-all friend Google and found a few recipes that met my criteria: easy, tasty, and… tomato based.
I decided to start with what I already knew how to make: Marinara sauce.
Considering that I use a lot of it, I made 7 litres and 5 pints.
I also made 7 pints of Roasted Pepper & Aubergine Puttanesca sauce and 6 litres and 6 pints of Enchilada sauce….
… 8 jars of Picante sauce and 6 of Tomato & Basil.
Having used all my red tomatoes, I now had to deal with the green ones!
I made 3 jars of Jamie Oliver green tomato chutney and 10 of Green Chilli sauce. This last one deserves a post of its own; it takes forever to make – although it’s very easy -but it’s worth it!
I then decided that it was time to make some jam.
I started with something straightforward: green tomato & apple. We have just finished a jar and it was gorgeous – if I may say so myself.
Doesn’t it look yummy?
After this first success, I started getting more (well…a little bit) more creative:
Ta da!!! 8 jars of each.
What do you do when you have a glut of tomatoes?
